Green cardamom, universally known as Elaichi in Hindi and Elakkai (ஏலக்காய்) in Tamil, is one of the world’s most prized and expensive spices. It is derived from the dried, green seed pods of the Elettaria cardamomum plant, a member of the ginger family. The small, oval-shaped pods contain tiny black seeds that hold the spice’s concentrated essential oils, giving it its distinctive flavor and aroma.
The flavor profile of green cardamom is complex and highly desirable: it is sweet, intensely aromatic, floral, and citrusy, with subtle notes of pine, resin, and a refreshing hint of mint or eucalyptus. It is available as whole pods (which are best for preserving flavor and are crushed or added whole to release seeds), shelled seeds, or as a finely ground powder. Freshly grinding the seeds from whole pods yields the most potent and nuanced flavor.
